Harvest & Vinification
Our method of harvesting and vinification follows the best procedures for the conservation of the intrinsic heritage of grapes.
The harvest is strictly manual, carried out by expert winemakers capable of selecting the best grapes directly in the vineyard, followed by further sorting in the cellar. This occurs on average at the end of August for the white berried grapes and between mid and late September for the black berried ones.
For White Wines, soft pneumatic pressing, a low temperature decantation of the must in an oxygen-free environment, followed by a slow fermentation at 14°C.
For Red Wines, destemming and pressing with fermentation at higher temperatures, always strictly controlled.
We use French oak vats and barriques for the maturation of the noble reds and we take the utmost care in bottling and subsequent storage in healthy and thermo-conditioned environments.

Our company has always worked with a high quality philosophy, under the care of internationally renowned professionals such as agronomists Federico Curtaz and Stefano Bartolomei and oenologists Paolo Caciorgna and Nicola Berti.
Federico Curtaz
Frederico Curtaz is an internationally renowned agronomist-oenologist of Valle d’Aosta origin, born in a small town at the foot of Monte Rosa.
Frederico was fascinated by the Piedmontese hills c his youth, so much so that every summer he moved to his grandparents dedicating himself to the vineyards. Hence the passion that led him to study viticulture and oenology; then entering the fascinating world of wine, obtaining prestigious awards nationally and internationally.
Stefano Bartolomei
Graduating in Pisa and specialising in Montpelier, he is an agronomist with experience in viticulture from the plant to the management and organisation of wineries.
For over thirty years he has been working in the vineyards dealing with the cultivation of indigenous and international vines. Though, he has also been rediscovering and evaluating ancient forgotten varieties, both in Italy and abroad.
Passionate and always ready to deepen the subject through continuous agronomic and oenological studies in every aspect, he believes in environmentally friendly viticulture and attentive to all integrated, organise and biodynamic farming techniques.
Paolo Caciorgna
Paolo Caciorgna is the famous winemaker of the Pepi Lignana labels of Fattoria il Casalone> Of Tuscan origins he is known as the winemaker of the stars; ‘he collaborated with the company of Sting and the Bocelli family’, as well as working for 25 years in the most important denominations of Italy, such as Brunello di Montalcino, Nobile di Montepulciano, Chianti Classico, Amarone, Greco di Tufo and Soave, one of the best wine-makers in Italy.Paolo is the son of a farmer and wine producer in Casole d’Elsa (SI); he contributes to the management of the Tenura Macchie company. The profession of Oenologist is in his DNA and his passion led him to become one of the most requested wine consultants. Known for his very authentic wines and his great sensitivity towards the world of wine including the different territorial identities that make Italian wine production extraordinary, our oenologist has had the merit of creating among the most acclaimed wines of the Peninsula.
Nicola Berti
After graduating in Viticulture and Oenology at the University of Florence, Nicola Berti specialised professionally at the school of the famous oenologist, Paolo Caciorgna.
Nicola advises mainly in Tuscany, specifically in important production areas such as Chianti Classico, Montalcino, San Gimignano and our Maremma.
A deep connoisseur of Tuscan vines, who also studies from a historical and cultural point of view, Berti has the merit of being a curious and meticulous man of wine.
