The manual harvest takes place at the end of August.
In the absence of oxygen, there is gentle squeezing.
The must is cooled and decanted.
Fermentation lasts 20 days at 14 ° C.
Aged for 7 months with noble lees, followed by refinement in the bottle.
Bright straw yellow with green highlights; an inviting and intense nose of peach, apricot, golden apple, floral caress, embellished with an iodized touch. Freshness is the first gustatory stimulus, which radiates a rich, soft and tasty flavour.
Bordeaux bottle. Boxes of 6 bottles. Number of bottles produced 35,000 / 40,000. Bottle size: 0.75 lt
Serve at 8 - 10 ° C.
It goes well with first courses of seafood, white meats, fish, crustaceans and molluscs, omelettes and Pecorino.
the Vines
Vermentino is one of the most popular white grape varieties in Italy.
The ideal areas for its cultivation are those near the sea, where other vines would be affected by brackish winds and prolonged drought.
Vermentino gives its best especially on the Tyrrhenian coast, in Liguria, Tuscany and Sardinia.
The scent of its wine is delicate and elegant, the mouth is full and well balanced, supported by the right freshness and rich flavour.
Viognier is a white grape variety originating from the Rhône Valley.
It resists drought but in many respects it is difficult to cultivate; it requires great knowledge and is very sensitive to albugin and powdery mildew.
Its grapes yield very little and must be harvested quickly.
It produces a wine with a singular scent of peach, apricot, white violet, honey and spices. The taste is rich, soft and of measured tension.
