Come and take a walk through the vineyards to discover our grapes. Afterwards we will open the doors of our cellar, where we will reveal the secrets of how our fine wines are born. Finally, we will crown the experience with a guided tasting of 6 of our wines. The tasting will be accompanied by tastings of local products and our IGP Extra Virgin Olive Oil. The visit is reserved for a minimum of 4 participants; for groups of more than 12 people, please contact the winery for a dedicated offer.

WALK AMONG THE VINEYARDS
the Colors and Scents of the Earth
The Fattoria il Casalone estate consists of about 300 hectares, 16 of which are dedicated to high quality wine production. Ours was from the beginning a project of great research and study, which meant that we could identify the best varieties to plant. At the beginning of the 1960s we had 12 ha of vineyards, and we can proudly say that we were among the first to experiment in the area as well as on traditional clones (Sangiovese, Trebbiano, Ansonica), on Cabernet Sauvignon, Cabernet Franc and Vermentino, which have created over time a perfect union with our territory influenced by the proximity to the sea. After years of research and in-depth analysis, in 2000 we replanted the vineyards, eliminated Trebbiano and Ansonica which produced wines not up to our high quality standard, introducing Viognier among the first in Maremma.
Sixty years after the birth of our ongoing research project on the quality of clones, paying particular attention to native varieties such as Vermentino, we can say that we are very satisfied with the results obtained from our vineyards at each harvest.
Today of these 16 hectares, 6 are dedicated to Vermentino and Viognier grapes and the remaining 10 are cultivated with Sangiovese, Cabernet Sauvignon, Cabernet Franc and Petit Verdot grapes.

our Secrets
Our method of harvesting and vinification follows the best procedures for preserving the intrinsic heritage of grapes.
The harvest is strictly manual, carried out by expert winemakers capable of selecting the best grapes directly in the vineyard, followed by further sorting in the cellar; it occurs on average at the end of August for the white berried grapes and between mid and late September for the black berried ones.
For White Wines soft pneumatic pressing, a low temperature decantation of the must in an oxygen-free environment, followed by a slow fermentation at 14 ° C; for Red Wines destemming and pressing with fermentation at higher temperatures, always strictly controlled.
We use French oak vats and barriques for the maturation of the noble reds and we take the utmost care in bottling and subsequent storage in healthy and thermo-conditioned environments.

In this rich guided tasting you will be able to grasp every single nuance of aromas and taste, told by our labels, famous all over the world. A roundup of fine whites and reds among historic wines and vines, obtained from grapes typical of the territory and of international progeny such as Vermentino and Viognier, Sangiovese, Cabernet Sauvignon, Cabernet Franc and Petit Verdot.
The tasting will be accompanied by tastings of local products at km 0 and the tasting of our IGP Extra Virgin Olive Oil.
