The key concepts underlying the tasting methodology created by Luca Maroni are Consistency (C), Balance (E) and Integrity (I) of wines. Consistency is the expressive volume of the wine, determined by its richness, and concerns the persistence and potential longevity of the wine. Balance is the harmony between the components, such that the taste of the wine is soft when tasted and the relationship between acid and bitterness is harmonious. Integrity is the absence in the taste-aroma of the wine of oenological transformation defects (sulphurous, vinegary, lactose, faded, woody) and oxidation.
The quality, purity and fragrance of the wine's components therefore express the technical caliber and potential longevity of the wine. The more consistent, balanced and intact the taste of the wine in question, the more pleasant its taste-aroma, the higher its organoleptic quality.
